The was a time (not so long ago) that I NEVER ate breakfast. Not that I didn't like it. I love it- I generally just never ate breakfast foods at the appropriate times. Then I had a health and fitness makeover and discovered that yes, what we've been told since childhood about breakfast being the most important meal of the day is in fact true. So now I rarely skip it (I actually crave it when I wake.) I like to mix it up. I'm not one of those people that can eat a bowl of oatmeal day in and day out. I've found there's one concoction that gets a lot more play than the others though. We'll call it poached egg on toast.
Sounds kind of boring, but it's not. AND it has endless configurations depending on what's in season and what's in your fridge.
My basic version is whole wheat toast, hummus, and poached egg (and fresh snipped basil while it's growing on my deck) Beyond that, use your imagination. I like tomatoes from my garden with it, but this week I topped the toast with eggplant, zucchini, and pepper. I also purchased one of those silicone egg poachers on a whim, but honestly, I think I like the good ol fashioned lumpy bumpy poached eggs.
The best part of all though, is that I can whip it up in about 5 minutes if I need to. That really does make it perfect.
