Ok- this isn't really a recipe per say. More of a different way to look at salad + bring a few more veggies to your morning meal.
Breakfast salad is greens + other things in the fridge that need to be used up, topped with eggs. My personal favorites are poached or soft boiled. Any kind with a gooey center is great, though, as this serves as part of your dressing.
This version was one of my personal favorites. Recreate it with the ingredients below:
Soft boiled or poached eggs
Drizzle of olive oil & balsamic vinegar (I used a balsamic fig shrub here)
Salt & Pepper to taste
