I am about to introduce you to your new favorite cocktail ingredient: celery. I know, I know... you don't want to believe me, but just hear me out. 

Celery has become my secret weapon in green juice concoctions. It's sort of like cucumber that way- mild, refreshing and adds just a little bit of brightness to the other ingredients. I've even started using celery juice as the base for many soups and sauces.

So, after countless green juice and celery experiments, I thought- what the heck, why not try this in a cocktail?! I also had some cilantro on hand, and knew the two flavors would blend effortlessly. 

This cocktail takes it's inspiration from the classic gimlet, which gets it's flavor from lime juice. But I took that up one more notch by also adding the ginger syrup. Oh- and I went ahead and used my cucumber basil infused vodka for even more subtle garden goodness. (This step is not required though.)

The result is a drink that tastes like spring in a glass. The very first sip had me grinning from ear to ear. And- it also indulges my delusional thinking that a cocktail could, in fact, be healthy for me. (We can dream, right??)

I'm calling this a sipper as a bit of a warning- it's so refreshing you're going to want to drink it down immediately and pour yourself another (and another, and another...). But remember- sip. enjoy. repeat.


1 Oz Vodka (I used a cucumber basil infusion, but regular ol' vodka is just fine too)
2-3 Stalks of Celery
1/4 Cup of Cilantro
1/2 Oz Ginger Syrup (see below)
Lime Juice

I use a sugar free version: combine 1/2 cup granulated sugar substitute (I use swerve) + 1 Cup water + a large piece of ginger peeled and chopped (approx 4-6 oz) on stovetop and bring to a boil. Remove from heat, and let cool for one hour. Once cool, strain mixture and store in an air tight container in the refrigerator. You can also do a traditional syrup by using the same steps above, simply replacing swerve with 1 cup sugar. 

Juice the celery and cilantro. If you don't have a juicer, you can blend in a high speed blender and then strain through a fine mesh sieve. 

Combine vodka, Ginger Syrup, 1 Oz celery and cilantro juice, and juice of 1/2 lime in a cocktail shaker with ice. Shake and pour into a glass with ice. Garnish with celery leaves or lime twist.
