My favorite way to have chia seeds is as a pudding. If you're not familiar, chia seeds make an excellent "pudding" like texture when added to liquid because the seeds expand and take on a gel quality. I like to blend my a little too, because it gives it even more traditional pudding texture. 

I'm a fan of simple chia pudding made with coconut milk, vanilla and a little stevia (or a date) for sweetness. This particular recipe is a version of that and came into being when I purchased too many mangos for another recipe and was looking for a way to use them up. I like eating these puddings as an alternative to desert, or you can have them in the morning as desert for breakfast! Enjoy!

• 1 1/2 cup coconut milk
• 1/2 cup chia seeds
• 1/2 mango
• a few drops stevia or 1-2 tbls honey if you like more sweetness

For Blended/Smooth Version: Place all ingredients in blender and blend on high for 1-2 minutes until completely smooth.

For Whole Chia Seed Version: Blend all ingredients except chia seeds in a blender until smooth Whisk in chia seeds.

Pour mixture into a jar or glass container and place in the refrigerator for at least 4 hours or overnight to let gel. I've found that the mixture gels much faster for the blended version.
